And the Next Rising Mango Star is…

A few months ago, the National Mango Board held a kid’s cooking contest, Rising Mango Star. Of all the youngsters who submitted videos, three finalists were chosen travel to New York to compete against one another on August 8th.  The prize?  The chance to appear with Ingrid Hoffmann (from Simply Delicioso) on TV’s video magazine […]

Pumpkin Whoopie Pies

We didn’t exactly set out to make pumpkin whoopie pies. It was about 95 degrees out, and pumpkin was the furthest thing from our minds. In fact, my daughter had a recipe for cream-filled lemon sandwich cookies picked out and, lemon lover that I am, I was definitely on board. But there was that long-lost container of cream […]

Food Expeditions with Kids, episode 4

…Continued from episode 3
We truly enjoyed tasting the variety of marmalades that were available with breakfast each day. Their flavors were bright and fresh, and were a wonderful change from the predictable flavors of jam we can find at home.

Naranjilla (Lulo) with sugar: This marmalade comes from a greenish citrus fruit and contains small flecks […]

Recipe for Action - Placemats for Children in the Hospital

Summer is here, and it’s time to think of all the different types of fun things you can do with your family. We have been thinking a lot about different ways we can help others, mostly through the act of cooking for and feeding others. But we had a great idea for how we […]

Turkey Taco Wraps

During one of my recent Tasty Tidbits Cooking Classes, parents asked me how to get their kids to eat less carbs and more veggies.  My mom and I created a fun, easy to assemble snack (or lunch or dinner) that kids can have fun preparing as well as eating.  I asked my students if they […]

Fruit Cooler

1 cup watermelon
1 cup crushed ice
1 tablespoon raw honey
Splash of Pellegrino (sparkling water)
Blend together first 4 ingredients.  Pour into 2 glasses.  Splash a bit of Pellegrino on top of each glass.  Enjoy!  This makes 2 servings.
We also […]

Fishy Fruit Dip

One of the best things about summer vacation is that my daughter wants to spend more time in the kitchen. Her free time is no longer limited to just a few activities, and the world is her playground all day long. As a result, she’s been spending more time looking through cookbooks and […]

Fizzy Fruit or Cratalians

My family and I have been making these delicious, healthy drinks for a long time. I like making up names for our recipes, so when I talk with young people about this drink I call it Fizzy Fruit. If I’m talking with adults about it, I call it Cratalians (Cranberry juice with Italian […]

Tuna Surprise

What’s so surprising about tuna? Well, actually, a couple of things, in this recipe.
For one, it’s the fact that my daughter made the sandwich pictured for me while I was working through lunch on a deadline. She decided to surprise me with lunch, and surprise me she did.
At age 12, she’s got enough chops in […]

Green Eggs and Ham

During one of my Tasty Tidbits cooking classes, I wanted to teach kids how to make green eggs and ham without using any food coloring. Pesto makes a great all-natural green coloring. I jazzed up my recipe with pesto and prosciutto — what amazing flavors! The kids in my class said, “I didn’t […]
