Picture Perfect Breakfast
Recently, I attended the K/BIS show in Atlanta. One of the exhibitors, Dacor Kitchen Appliances, had Jan D’Atri in attendance and cooking. Jan D’Atri, cookbook author, restaurateur, and one of Dacor’s chefs, shared a few of her delicious recipes at the show, but there are a vast number of succulent selections on the company’s website.
While I had not intention of eating anything while at the show, there were little squares of something that drew me near. I caved and tasted the the little square of bread, egg, and delicious seasonings. I had to know what I was, so I asked and was delighted with how friendly, open, and generous Chef D’Atri was when I asked her about her recipe.
“Picture Perfect Breakfast” is not only great for adults, but it is wonderful to make with kids. As Chef D’Atri explained, children can add their preferred fillings and have their own personalized pieces. I made this one fairly simple, with peppers and tomatoes, but (approximately) ¼ cup of most anything will work – chopped bacon/sausage, sliced mushrooms, diced fresh or sun-dried tomatoes, chopped cooked ham/turkey/chicken, peppers, pepperoni, olives…you name it! Go wild.

1 tube of refrigerated bread stick dough

6 eggs plus 1 for egg wash

2 Tbsp. milk

1 ½ cup (or more) grated cheddar cheese (I used a Colby/Cheddar mix)

1-2 Tbsp. melted butter

Salt/pepper to taste

In a greased shallow baking sheet (approx. 9 ½ X 11-inch) line the rim with 6-8 bread strips (twisted slightly) creating a frame of bread. (Pinch the bread sticks together to form a continuous frame.) Next, make one horizontal and two vertical rows with the remaining bread strips, creating squares about 3-inches in diameter. (For smaller squares, make 2 horizontal and two vertical rows.)Brush the bread with lightly beaten egg (to create a shiny finished frame and to “glue” the bread together). Fill each square with ¼ cup cheese and ¼ cup desired topping.
In a medium bowl, whisk together remining 6 eggs and milk. Pour egg mixture over bread picture frame and toppings, covering the bread. Add salt and pepper.
Bake at 375º F for about 20 minutes, or until the bread is golden brown and eggs are cooked. Remove from the oven and brush the melted butter over the bread frame (I omitted this step). Slice into squares, using the bread to frame each slice. (I lined the pan with foil before spraying with PAM, but it wasn’t necessary. Once I allowed the pan to sit for a few minutes before I sliced the squares with a pizza cutter, the pieces came out easily with a spatula.)
