Celebrate Mother’s Day With A Perfect Drink

Frequently when we plan for celebrations and special occasions, we put a lot of thought and energy into planning and preparing a decent meal.  As happens all too often though, the beverage selection seldom gets thought of, and many a last-minute dash to the beverage mart has taken place.  This year for Mother’s Day, why not save yourself the trouble of that last-minute dash by offering up a mocktail that will please everyone in attendance.

This is the one beverage that I can make for the whole family, and everyone loves it.  It started on a whim, a way to use up the remains of a bottle of pomegranate juice, but one sip by the kids, and we were dashing back to the store for another bottle.  By using the antioxidant-laden juice, I can also feel better about allowing the kids to have a sugary drink.  And of course, if you have adults in attendance who would rather add a little spike — a small splash of cranberry vodka in the bottom of their glass will go a very long way. This recipe multiplies effortlessly as well.
Pomegranate Mocktail

  • 48 ounces 7-Up (4 cans)
  • 16 ounces 100% pomegranate juice (I prefer POM Wonderful)
  • ice cubes and lime slices to garnish

Combine the 7-Up and pomegranate juice in a pitcher, stir very gently to combine.  Add ice cubes just before serving, and garnish each glass with a lime slice.

Makes 8 servings.
