Cinnamon-Scented Krispie Squares
Just like that, it’s December, and the race to find the perfect holiday gift is on. With no less than ten teacher gifts needed this year for my children, we’ve been on the prowl for ideal treats that the kids can make themselves for the teachers they love. We’ve assembled a small list of treats that either child can make with minimal help from an adult, and we will likely include a small something from Mom as well. Abigail has decided that she would like to make a batch of Festive Fudge for a few of her teachers. Zander decided that he would like to make chocolate dipped pretzels — with white chocolate and sprinkles, of course. I thought we needed just one more option for the kids to pack up with love when I thought of Rice Krispies Treats.
Rice cereal, marshmallows, and butter are all that is needed to make a traditional rice square treat. To jazz it up for the holidays, though, we decided to add just one simple ingredient, and you would not believe the difference it makes to these treats. Ground cinnamon is the magic ingredient that takes regular old treats and transforms them into something exciting and exotic. The cinnamon adds that little touch that keeps you coming back for just one more bite, because that last one could not possibly have been so good.
The only problem we have? Actually getting the treats out of the pan and into some cellophane wrapping, it seems we have a mouse or two or three in the house who just can’t resist. Oh, and did I mention these go spectacularly well with a mug of hot chocolate? Maybe you’ll have better luck wrapping these up to give away.
Cinnamon Scented Krispie Squares
- 4 tablespoons butter
- 48 large marshmallows
- 1/2 teaspoon ground cinnamon
- 7 cups crisped rice cereal
Prepare a 9×13 pan by spraying it with cooking spray. Put the butter and marshmallows into a large pot over medium-low heat. Stir pretty frequently to prevent the marshmallows from sticking and the butter from browning. Once the marshmallows are completely melted, add the cinnamon, and mix well to combine. Fold in the rice cereal, and once well mixed, spread the mixture into the prepared pan. Spray a spatula or your hands with cooking spray and press the mixture evenly down into the pan. Allow to set completely before cutting into squares, about 1 hour.
Makes 20 squares.
