Must. Make. Real. Food.


Happy Thanksgiving from our home to yours!  If you are anything like me, this week has been a bit of a whirlwind in preparation for The Greatest Food Holiday Ever.  Grocery shopping has been done, wine has been picked up, the turkey brine is underway, and the pie crusts have been rolled out.  But then, out of nowhere comes a little voice — “What’s for dinner, Mom?”  Uh, dinner.  That’s right.  My children still need nourishment.  I suspect tossing them a few handfuls of stuffing cubes isn’t going to cut it, so I go on a quick scavenger hunt.  A brief perusal through my fridge and the “Do Not Consume Until Thanksgiving” ingredients reveal just the right ingredients for a quick batch of homemade macaroni and cheese.

How quick, you ask?  How does thirty seconds sound to you?  By using the crockpot and letting it do the work for you during a four hour time period, you can have an effortless dinner ready and waiting for when those hunger pains strike.  Add some fresh cut-up fruit and you have a meal that the whole household will enjoy.
Crockpot Macaroni And Cheese

8 oz. uncooked macaroni
2 eggs
1 1/4 cup milk
1 (12 oz) can evaporated milk
4 cups shredded sharp cheddar cheese-divided
Salt and pepper to taste
In a large bowl, beat the eggs and milks together until well combined. Add the macaroni, salt, pepper, and 3 1/2 cups of the cheese. Mix well and pour into crock pot. Sprinkle remaining cheese on top, cover and cook on low for about 4 hours. Do not open the lid at all during cooking time.
