Filling the Virtual Lunchbox
It’s that time of year when, after a relaxed summer, both parents and kids have to start thinking (and sometimes stressing) about what to pack for a healthy lunch. When I was young, each kid in our family made their own lunch, and this often led to some pretty interesting (and not necessarily healthy) combinations. Our options were pretty much limited to peanut butter and jelly or some lunch meat and cheese combo, with several processed items as sides.
I wish we had had the tips and recipes from iLunchBox when I was younger. There are so many more options out there than your basic sandwich. These recipes (and the dozens of others) are healthy, flavorful, and simple enough for your kids to make themselves, or at least help you with.
