Turkey Taco Wraps


turkey-wraps.JPGDuring one of my recent Tasty Tidbits Cooking Classes, parents asked me how to get their kids to eat less carbs and more veggies.  My mom and I created a fun, easy to assemble snack (or lunch or dinner) that kids can have fun preparing as well as eating.  I asked my students if they would think about making Turkey Taco Wraps for their family as a way to do something nice.  All the kids yelled, “Yes!”

Wraps can be filled with any combination of lean meat, fresh veggies and black beans.

INGREDIENTS:
2 slices Boar’s Head or Applegate deli turkey (the healthiest deli meat you can find)
2 Boston lettuce leaves, rinsed and dried
2 slices provolone cheese or sprinkling of shredded cheese
1/4 cup canned black beans, drained and rinsed
To taste all-natural salsa

Layer 1 slice each of turkey and cheese, top with salsa and half of the black beans into lettuce leaf and wrap up (like a taco shell).

Yields: 2 snack servings

Optional ingredients:
Replace salsa with Dijon mustard
Replace black beans with other beans
Add sliced veggies
