Easter Egg Recipes
It’s certainly lots of fun decorating Easter eggs, and they sure are pretty. The kids have a great time, and you really can’t tell them there will be no Easter egg decorating.
Then the days following Easter happen, and I stare at those eggs. They sit there, perky and bright, taunting me. I vow they will not beat me.
I make an egg salad sandwich. I try to ignore the unsettling streaks of day glow orange. Then it happens. I look at the eggs, I look at the calendar, and I get that nervous feeling. And then pink, yellow, purple and blue eggs get dumped into the trash. Such a waste.
Not this year! I’ve decided this will be the year every last egg in that pastel dozen will get eaten.
In case you, too, hate to waste Easter eggs, here are some resources I’ve found with things to do with leftover hard-boiled eggs:
- BlogHer features this cool list of 10 Things to Make with Leftover Hard-Boiled Eggs. There are some unexpected ideas here, such as Hard Cooked Egg Cookies.
- I was also pretty impressed with this lengthy list of Easter Hard-Boiled Eggs Recipes. It includes a Sweet Potato Shepherd’s Pie and Vegetables with Avocado Aioli.
- Another very cool resource for those hard up for post-Easter egg use ideas is the Epicurious Easter Guide, which features a Leftover Egg Recipe Slideshow.
