5-Minute Gnocchi for Hungry Kids
When toddlers are hungry, they are hungry NOW. I like to still put something together that somewhat resembles prepared food, however. The other day, I threw together a gnocchi lunch that (with the exception of water boiling time) took less than five minutes. It also included some pretty healthy and even fresh ingredients found in my kitchen.
I had a package of gnocchi with a 3-4 minute preparation time, and I had a can of organic tomato sauce. I also had just bought a local farm goat cheese, and I had some basil growing in my kitchen. Within five minutes, it was done and all it used was one pot.
Tomato Goat Cheese Gnocchi Recipe
Ingredients:
- One package of gnocchi
- One small can of organic tomato sauce
- 1/2 cup of fresh crumbled goat cheese
- A few basil leaves, chopped
Directions:
- Cook gnocchi according to package directions
- Drain and return to pot
- Pour in tomato sauce
- Toss in goat cheese
- Toss in basil
- Stir vigorously
The gnocchi tasted great, and it was devoured by the kids. The nice thing is the goat cheese made the tomato sauce thick and sticky, making it less messy for sloppy little eaters.
