Optimal Return on Investment: High Mileage Meals
As the New Year unfolds, my daughter, Lizzie Marie, and I are honored to have an opportunity to provide healthy meals for a local chiropractor’s clients who are participating in a Body by God challenge. Our goal is to educate how simple and easy it is to prepare healthy foods, especially High Mileage Meals. Repurposing leftovers is not a new concept; most everyone has reheated leftovers in a microwave at some point. The key is learning creative ways to get the most bang for your buck when buying groceries by providing an optimal Return on Investment (ROI) with High Mileage Meals.
What exactly is a High Mileage Meal? It is a meal that provides enough leftovers that can be redesigned into imaginative meals for you and your family. A perfect example is a little chicken I removed from my freezer last week. This chicken grew up in a wonderful environment on a free-range local farm eating an all-natural diet — the most amazing flavor of any poultry I have ever tasted. The chicken embarked on its journey.
Mile 1: Sunday dinner – roasted citrus chicken
Mile 2: Monday lunch – sliced chicken breast with salad
Mile 3: Tuesday afternoon – placed chicken carcass into freezer bag then freezer
Mile 4: Following Saturday – defrosted carcass to create homemade chicken stock, some of which will be used for soup in the coming week, remaining stock poured into freezer-safe containers and frozen.
Mile 5: Sunday afternoon – created homemade Lemon Harvest Soup with homemade chicken stock
In one week’s time, the chicken provided several different meals, stocks and soups that not only fed our family, but the chiropractor’s clients as well. Not to mention, there are several frozen containers of stock in my freezer. This is an example of what I call a positive ROI on a High Mileage Meal.
