I just bought a mini muffin pan this morning as a matter of fact! One of those things I've been meaning to do but never get to it. We made some fantastic and very popular sweet potato muffins last week and I'm going to make them again as mini muffins. Recipe for sweet potato muffins at my preschool nutrition site on the nutrition blog.

Beth - I'll have to try the kale chips!

Great ideas. I like to make a big batch of mini muffins and freeze 'em, then defrost one at a time for a snack. Some other snacks that are common in our house are carrots and hummus, apples and peanut butter, baked tortilla chips and guacamole, yogurt with goji berries, chocolate soymilk, or fruit smoothies.

For snacks, we always keep fresh and dried fruit, nuts, cheese, yogurt and veggies like edamame and even kale chips (easy to make, recipe at my site). AT under three, my kiddo already knows where to go for a snack on her own, and I like her being able to grab something healthy no matter what she's after.
