Candy Sushi for Kids


candy-sushi2.jpgI have no problem with bribery.  Sometimes a little sweet treat is just the little something Nicholas needs to be motivated to eat his dinner.  I’m not a big advocate of the Clean Plate Club, because honestly, they will eat when they are hungry.  But that being said, sometimes it’s good to see a little something special at the end of a good, healthy meal, and if it’s a fun one, even better.

Over the weekend, we got together with our Neighbors for our weekly dinner, and I made a batch of candy sushi for the kids.  Simple to make, colorful and definitely a hit, this recipe comes from a recent episode of Rachael Ray’s talk show

Candy Sushi
4 large marshmallows or 1 cup mini-marshmallows
1 tablespoon unsalted butter
1/2 cup rice cereal
2 cherry or strawberry licorice twists, such as Twizzlers or Red Vines
2 fruit roll-ups, any flavor
In a small saucepan, melt marshmallows with the butter over low heat. Add the rice cereal and stir to coat; let cool slightly.   

Cut licorice to the length of the fruit roll-up. Unroll the fruit roll-up and peel off the plastic film. Place half of the rice cereal mixture on the edge of each roll-up. Place the twist in the center of the rice mixture and roll up the candy sushi. Dip a knife in water to keep it from sticking and cut into 2-inch pieces

Yields 1 serving (This is crazy.  It yielded enough for 3-4 kids easily)
