Enough Already!
The holiday season at our house is a time of indulgence. Platters of cookies sit out at all times, ready for eager mouths to grab a nibble. Meals lean towards the decadent and rich, dishes full of flavor and reserved for celebrations. After a while, though, it becomes too much. Even my young children are clamoring for fruits and vegetables after a few days of heavy meals and cookies to order.
Fortunately for us, I was the beneficiary of a brand new Cuisinart Blender this Christmas, and it’s already been put to good use. We have rediscovered the art of smoothie making, and the whole family is benefiting from this resurgence. Cool, refreshing, and loaded with health-boosting vitamins, smoothies are just what the doctor ordered. We’ve been having fun coming up with different combinations, and the one below is Abigail’s favorite. It calls for fresh strawberries and bananas, but I should confess that for smoothies, frozen fruits work excellent, and they add a frosty element that make the smoothie even better. Change this up to suit your tastes. Use an orange instead of a lemon, a kiwi in place of the banana, or frozen peaches instead of the strawberries. Any way you make them, smoothies are a fantastic break from the richness of the holidays.
Fruit Smoothies
From Children’s Quick & Easy Cook Book by Angela Wilkes
1 pint strawberries (I used frozen berries)
1 banana
1 lemon
1 tablespoon superfine sugar (I omitted)
½ cup plain yogurt (Fat-free frozen yogurt also works great!)
2/3 cup milk
1. Hull, wash, and dry the strawberries. Peel and slice the banana and put it in the blender with a squeeze of lemon.
2. Add the strawberries, sugar, yogurt, and milk. Put the lid on the blender and blend for 1 minute until smooth and frosty.
Serves 2.
