Cookies Kids Can Make- Part 2
Perhaps I should have named this “Treats kids can make.” Depending on your personal definition of a cookie, this next choice may not fit the bill. It does, however, fit the bill as delicious and wonderful for kids to make. Peanut Butter Balls were a staple at holiday times for us growing up. We all loved how they reminded us of our favorite peanut butter candy bar. My daughter loves making these because she can do the entire process by herself. Crushing the graham crackers can be done in a large zipper bag with a rolling pin, and both my kids love to take turns crushing the graham crackers. If you have an older child, the crackers can certainly go for a ride in the food processor for even finer crumbs.
There are many variations of Peanut Butter Balls, and this one is our personal favorite. We prefer to use a chunky peanut butter, but creamy does work just as well.
Peanut Butter Balls
2 cups Peanut Butter
2 cups powdered sugar
36 squares graham crackers, crushed (or 1 ½ packages)
1/3 cup melted butter
2 packages milk chocolate chips
Combine all ingredients in a large bowl and mix together with your hands. Form into 1-inch balls, setting them on a baking sheet covered with waxed paper. Chill the balls at least 3 hours.
Melt milk chocolate chips in a microwave-safe bowl. Dip each ball in chocolate, placing it back on the waxed paper to harden.
These will store in a sealed container for up to two weeks (if they last that long). They also freeze well for about 6 months. Makes about 60 balls.
