Summer in December

My four-year-old son, Nicholas, is not a big fan of soup. I can usually get him to try a spoonful or two, but he isn’t going to be requesting it on his own any time soon. That was until he helped me make Chilled Strawberry Soup. He loves strawberries, so I knew he’d be an easy target, and this recipe is so incredibly simple, he loves to help make it.
Throw a few ingredients in a blender, whiz it around, chill in the fridge for a bit, and soon you’ll be slurping up Chilled Strawberry Soup. He likes it so much, he even requests it for his school lunches. My kinda kid.
- 1 pint fresh strawberries, hulled or one 1-lb bag of frozen strawberries, thawed
- 2 tablespoons sugar
- 1/3 cup white wine or white grape juice
In a food processor or blender, combine all of the ingredients; cover and process for 30 seconds or until smooth. Pour into a bowl. Refrigerate until chilled. Yield: 2 servings.
