Healthy treats to put in the lunchbox


Last week I introduced you to the wonder that is a Laptop Lunchbox. Those unique boxes are just begging for great things to fill them. Jennifer McCann at Vegan Lunch Box has taken on the challenge and come up with hundreds of recipes. She’s a “vegan activist who loves to cook (and eat!),” so you’re guaranteed some great, healthy treats.

On her blog, Jennifer frequently posts a complete lunchbox layout with links to recipes. The meals are often themed and always creative and so delicious looking that even die-hard meat eaters will be licking their chops. Check out her awesome Southwest themed lunch! Each post ends with a rating, usually from her young son, of flavor, fun, and ease of eating.

I love this lunchbox. I love packing my daughter’s lunch before school, because it keeps me from packing too much of one thing. I also love that she brings the remains home again, so I can see what she’s eaten eith gusto, and what’s been shoved aside.
The only problem? I have yet to figure out how to compete with the school’s offerings of chicken nuggets and french toast sticks. Someone needs to come up with a bento box that keeps hot food hot.
